Confessions Of A Death Row Prison Guard

What was the worst crime that someone was executed for while you were working there?

While we weren’t given any information on the inmates, sometimes certain inmates would stick out in my mind that I’d go home and find the information. The worst I found was one guy that killed a child, skinning it while it was still alive. I tried not talking to him anymore.

Have you seen the actual execution chamber and the cell they stay in the day prior to the execution? If so, could you describe some of the details as to what they looked liked, including how the witness viewing area is set up? Also, how does the process of their last few minutes alive work exactly? Does the actual execution take long?

The inmate is walked in the back door of the building. He is lead through a small office, which is set up like a medical bay. At the end of the office is the holding cell where he will spend his last hours. The execution squad, doctors, chaplain, and warden will all be in the medical office, there in front of the inmate. He is not left alone for a minute. From the medical office leads into the execution chamber. That’s where the bed is. In front of the bed is a large window, think like a stage. Behind the bed is a one way mirror. In this room is where the doctor delivers the cocktail. In the room in front of the bed is three-four rows of chairs for the witnesses. They are closed off from the execution room. There is a curtain drawn over the window while the inmate is being set up in the bed. He is given a sedative if he wants one, then they open the curtains. At this point he is strapped down and only the chaplain is in the room with him. He is offered his last words, which are played through a speaker to the viewing room. After the words the chaplain leave. The injection is delivered. He falls asleep before the lethal dose is given. Afterwards, the doctor and warden walk in. The doctor checks his vitals. Once determined dead, the warden announces the time to the viewers. The certain is closed. The body is removed by the execution squad correctional officers. He is handcuffed, as per state policy, as he is still “an inmate”. He is placed in a body bag and sent off to the GBI crime lab. An autopsy is done to make sure the doe is what killed him. The handcuffs are removed, and the body is released to the family. If no family, he is buried on state prison grounds.

Do you also have to escort the inmate in his last moments? Prepare him for his sentence? How do the inmates act on such occassions? Are they allowed to talk to you and what do they talk about?

Executions are handled by a special unit of officers called the execution squad. They are with the inmates in the last 12 hours of their life. No other correctional officer gets to interact with the inmate.

What I was part of was “death watch” which is the night prior to their execution. He didn’t talk much and kept to himself most of the night. They are allowed unlimited phone so he talked to his family for most of the time we were there.

Would you expand on what the “death watches” were?

They are placed in a cell alone located in the medical ward. Here they are watched by two guards at all times. They are allowed tv, unlimited phone, radio, cigarettes, and some food usually restricted. It’s basically a way to segregate them before being put to death.

Unlimited phone? Did any one of them try to contact their victim’s families?

If they had, the phone would have been taken away. They didn’t want that to happen. Each call was screened before being sent out.

Do they have TV while on death row or for some of them if the the first time they have seen TV in years?

Yes, color TV.  The death row inmates are treated the best. Newest stuff, best TVs, radios, cells to themselves. So they are comfortable. Think that’s what keeps them sane.

What kind of TV? Could they request specific shows, or did they just get whatever was showing?

Basic cable. They were able to request shows. I remember they always watched wrestling on Monday night. And COPS, for some reason they loved watching that show. Never understood that.

How does one get to be part of the execution squad?

Know the right people. Back then, being young and stupid, I wanted to be a part of it. Now I’m thankful I never was. I’m sure that would have fucked with my psyche more than anything else.

Do any of them try to fight their way out of it, or are they just content with it?

We did have an attempted escape. They tried to tunnel out the back where the pipes and stuff run. They made it to the final exterior door before they were caught.

Death row inmates though were usually the best behaved inmates in the prison. They were the most secured too though so it’s not likely they would have been able to attempt anything should they have tried.

Have you ever had a death row inmate commit suicide before his execution date?

The way execution is handled is that the governor signs the execution warrant. It is given to the warden. The warden decides when the execution will take place (usually days later). The death row inmate is immediately placed under “death watch” prior to his execution. Here they are by themselves and watched by two guards at all times. The day of the execution they are placed in a cell beside the execution chamber where they are watched by four “execution squad” members at all times. Basically, they aren’t given a chance to kill themselves. At that moment, the state is determined to be the one to handle his death.

When an inmate is given their injection, what people are watching? Just the guards? Are the inmate’s family allowed to watch?

Inmate’s family (usually doesn’t show), the victim’s family, one local media from the county the crime happened in(must be in attendance to witness and confirm), and the local sheriff of the county the crime happened in is invited.

Does the victim’s family usually show from your experience?

Yes, there is usually at least one victim family there. Guess they see it as some type of closure.

Did most of them turn to religion towards the end?

Yes, nearly every one of them in there held on to religion. I think it was a great coping mechanism for them. It gave them a chance at peace for what they had done I guess.

What about people who were not religious to begin with? Did a lot of people seem to “find Jesus” right near the end?

Absolutely. As I mentioned earlier I think it was a coping mechanism. Made everything just a little better. They believed that they were forgiven and would get a chance in heaven. Gave them something to look forward to since they knew death was approaching.

Saddest thing you’ve ever witnessed?

I heard a rape I couldn’t do anything about. This was when I was working in the larger cell house with around 260 inamates. I heard the screaming coming from one of the cells but couldn’t find it in time. When I finally did I knew something had happened but the inmate wouldn’t talk.

Were you armed? And were others with you?

We were not given anything at all to protect ourselves. Still today they don’t have any weapons, not even OC spray. The idea of that is that the inmates could (and very easily because of being outnumbered) get it and use it as an offense.

Did you guys have much hand to hand combat training?

Very little. COs are very under trained, under staffed, and no weapons. I still have great respect for correctional officers.

What were some of the more unique or interesting last meal requests that you know about?

The prison actually had a set cost. I believe it was $60. Speaking to veteran guards there the request was usually fast food followed by ice cream. They say you don’t realize how much you miss ice cream until you absolutely can’t get it anymore.

Was there ever anyone who was allergic to peanuts or shellfish and ordered it for their last meal to try and commit suicide from it

The doctors are well aware of their allergens and had to approve their last meal before it was delivered. They gotta be smarter than that.

Anything paranormal happen during your time?

Absolutely. I’ve seen “inmates” outside of their cell. Heard officer keys at night when there was no one but me. Had a friend working a tower that saw the old school inmates with the black and white stripped uniforms and old school prison guard as they were cleaning up the side of the road next to the tower. Didn’t believe in paranormal stuff prior to working there, but afterwards I’m convinced there is something there.

Elaborate on your experiences seeing “inmates” outside of their cell?

Saw figures standing at the end of ranges and when I got to where they were there would be nothing there. It was impossible for an actual inmate to get out, and if he was out and standing there, it would have been impossible to get back in. Sometimes other inmates would call me down because they had someone standing in front of their cell. Once one asked me why I came back to his cell after a short period. I hadn’t been there in over an hour. He says an officer was just standing in front of his cell 5 minutes prior.

What are your opinions of the death penalty?

I have mixed emotions about it. Part of me supports it, as those that are on death row deserve their punishment. The other part has that worry that they have the chance of being innocent. Ultimately, I’d rather every man be allowed to live then one innocent man being put to death.

Was there anyone on death row that you thought was truly innocent?

We aren’t given any information on the inmates we are watching. We have to do our own investigating through media to figure out what they are in there for. With minimum contact with the inmates and no other information to go off of, you don’t really think about it. They didn’t talk about the reason they were there.

Don’t think about them, or try not to think about them?

I just treated everyone the same. Made it easier to deal with people if I didn’t know what they were in there for.

Have you ever really wanted to know what someone was in for?

It didn’t happen much, but there were just some inmates that were super creepy and I was just curious of what they did. Those are usually the only ones I looked up myself.

Have you ever gotten to know any of the inmates before they were put to death? And did you feel bad for any of them?

Never got to know any of them personally. We were allowed minimum contact with death row inmates. During the hourly checks we were separated from them by another cage whereas we walked down a sectioned off alleyway looking into the cells. I do remember one guy who had been on death row for 24 years. I was 18 at the time. It was fascinating talking to someone who had been in that cellblock longer than I’ve been alive.

So why are some inmates held for so long on death row, while some so little time? Is it priority?

By their own appeals process. Lawyers find new evidence, request a new trial. That alone can take 2-3 years. The appeals process slows it down even more after the trial. One thing about the death penalty, they give the person plenty of chances to prove their innocence, especially now. Back in the day it probably wasn’t so good. Some slow it down, other accept their fate and don’t fight it.

Were any of them proud to be on death row? Or did they all seem apologetic for the crimes that got them in there?

Neither, they just seemed content. They didn’t talk about why they were there. Nearly all of them were heavy in to religion though and focused mostly on talking about that. It was a surreal feeling.

Inmate who has had the biggest impact on your life to this day? Whether or not it was a small or large change

The inmate I watched the night before he was put to death. Before leaving my shift of death watch we had to wake him up at 6am. When he awoke, as I was leaving, he told us to “have a good day”. This, even though he was going to die that night. Was a powerful thing.

..how do you respond to something like that, “you too”?

Honestly, I almost did. Was able to catch myself. Said “thanks”.

Have you ever had any crazy requests from any of the inmates?

The thing requested the most was for me to contact their family for them. It was really depressing.

What was it like going to work everyday?

It was very interesting. Dealing with people in that type of setting is an experience I’ll never forget. We were also outnumbered 300 to 1 so that lack of complete control was offsetting at times.

What was your favorite/least favorite part about your job?

I like talking to people. Talking to prisoners and learning about their life was fascinating to me. Most of them just wanted someone to talk to listen to them anyway. Least favorite was being stuck back there with them. When those gates closed behind you it was a horrible feeling because you knew if shit went down, you wasn’t getting out.

Are you the subject of a lot of hate from the inmates because you are seen as who is sentencing them because you are authority? And were you ever attacked by an inmate?

The only hate we got from inmates were those trying to establish a reputation. None of them held us personally accountable for the reason they were there. They knew we weren’t cops and we had nothing to do with their sentence. The only time we were tried up was as an attempt to gain some type of fear or control over the cellblock. That never worked though.

I was almost shanked (stabbed) by a former cop in protective custody. I let my guard down because he was a former cop, thinking he wouldn’t try to hurt me. He almost stabbed me through the meal slot. I was able to catch his arm and ended up breaking his elbow. Learned a lesson that day.

Why did he try to stab you?

He was just having a bad day. I don’t know what made him want to do it. He was in there for child molestation, guess he thought things couldn’t get any worse.

I can’t be the only one who pictures the green mile when we talk about this. Are there many similarities (realising that the old one WAS set back quite a few years) Also, were there any cruel guards?

There were guards that wanted to be cruel, but when you’re outnumbered 300 to 1, you don’t disrespect the power of the inmates. You’re in their house, they are just allowing you to survive there.

There are a few similarities, the major one being the walk to the execution chamber (the green mile). That’s still being done today here.

What was the gang culture like in there?

Everyone in there had the “gang mentality”. Respect in the prison is regarded to what we do as trust on the street. If I’m doing a business deal with you, I need you to trust that I’m good on what I say I will do for you. Respect is the same thing. If you don’t gain any respect you’re regarded as a coward, prey. It really is a dog eat dog world in a prison. You’re either a leader or you’re preyed upon.

When you watch movies about or set in prisons/death row, what parts make you complain out loud about inacuracies?

The freedom the character has. Prisons are incredibly controlling, unless you’re in a minimum security prison. The stuff I see them get away with in shows makes me laugh.

Do you feel desensitized to other real life situations as a result of working in death row or have any different outlooks on life from it?

The prison system didn’t desensitize me. If anything, it made me enjoy my freedom more. After doing that, there’s no way I’d intentionally do anything to end up in that situation.

Thomas Neil Rodriguez adopted a mixed-breed puppy from an animal shelter in 1999. Fifteen years later, the loving dog owner learned his beloved pet Poh had several terminal health problems and would not live much longer. So Rodriguez decided to give his loyal pal the trip of a lifetime.

Poh, Rodriguez, and his fiancee took to the road for seven weeks, visiting 35 cities and traveling over 12,000 miles. They set off from their home in New York City for California so the water-loving dog could swim in the Pacific Ocean. And along the way, Poh got to see dozens of famous landmarks in Texas, Oregon, Arizona, and more.

Although Rodriguez was worried Poh wouldn’t make it through the first two weeks, the pup got to enjoy every bit of the adventure and document every stop on his own Instagram account.

Poh is back on the East Coast now, but still going on adventures. During Memorial Day weekend, the pup got to see Coney Island for the first time. Says Rodriguez, “I am super blessed that I have actually gotten to do this … People think I take care of Poh, but Poh takes care of me.”

#10 – For the most part, what others think doesn’t matter.

Ten years ago I was a 17 year old high school student who let the opinions of other people largely influence my choices. It was a dumb way to live, considering that ten years later, those people whose opinions I held in such high regard aren’t even a part of my life anymore!

The times when someone else’s opinion of you truly matters are few and far between. Think first impressions, like meeting your significant other’s family, meeting a new client, or meeting a potential employer for a job interview.

Don’t let other people rent space in your head. What they think of you isn’t important. What matters most is how you feel about yourself.

#9 – Explore new hobbies and opportunities often.

When I cared about what other people might think about me, I never tried new things. I was afraid that if I sucked at something, I’d be embarrassed. To spare myself the embarrassment of being bad at something new, I would never explore opportunities to learn a new skill, or start a new hobby.

Looking back on it, I see it as lots of time lost!

Nowadays I’m always anxious to put myself out there and learn something new. I sing at karaoke, I enter juggling contests, and I play Euchre even though I suck at all of them. I try new things as they come up, whether it’s a new restaurant, a new beer, or a new pastime. When you try new things, you discover more and more things that you enjoy.

Currently, I have plans to master the piano, the pool table, the surfboard, and the pen in my lifetime. They’re things that I know I love. Still, if you were to introduce me to a unicycle today, I’d hop right on to try and take it for a spin, fall off, and then hop on again!

As Harold and Maude put it best, “Everyone has the right to make an ass out of themselves. You just can’t let the world judge you too much.”

#8 – Nobody knows what you’re thinking unless you tell them.

People can’t read your mind. This goes for your significant other, your employer, and that hot girl you’re too scared to talk to.

Ten years ago I was dating someone I no longer wanted to date. I knew that I was unhappy in the relationship, but she didn’t. Consequently, I waited and waited for things to improve, but they never did. I want to scream at my young self: Well no shiet things didn’t improve. You never told her anything was wrong!

Relationships can’t improve unless you communicate. This applies to your relationship with your employer also — if you’re working hard at your job and believe that you deserve a raise, you probably won’t get it unless you ask for it.

Simply put, your supervisor doesn’t know what you want. Don’t wait for them to come to you, because your blood will boil over and you’ll end up quitting before it ever happens. Ask to meet privately and spell it out for them!

As for that hot girl, if you don’t say anything before she walks out that door, then she’s going to walk out of your life forever having never known you. Don’t let it happen. Learn to communicate so people can know you.

#7 – Talk to everyone in college.

Professors. Classmates. Roommates. Neighbors. Frats. Sororities. Clubs. Students outside of your major. Students outside of your social clique. Returning students that are older than you. Teaching assistants. Resident assistants. Adjuncts. Tutors. Career advisors. Deans. Librarians. Friends.

Why? Networking. When employers look for a good match for a job opening, the first thing they do is ask the people they’re already working with if they know someone who would do well in the position. They tend to look through resumes as a last resort.

College is the best opportunity you’ll ever have to build a complex, varied network of smart people. Use it to your advantage and get your name out there, because grades mean nothing in the real world.

Also, live it up, because college is fuking awesome. Trust me when I tell you that after you’ve graduated, you’ll go through college withdrawal. There’s a reason why so many people say it’s the best four years of your life.

#6 – Leave every job on good terms.

No matter how good it might feel to tell your boss to suck it right before storming out of a dead-end job forever, it is never worth it. You will probably need another job someday, and you might just need some good references to get it.

Giving up all opportunities for future recommendations for one fleeting moment to tell your employer what you really think about them is a bad trade. Give two weeks notice, and say thanks for the opportunity to work with them — even if it’s bullshiet.

#5 – Pay your dues.

Even though you may have been hot shiet in college, or at your last job, it will not grant you the slightest amount of entitlement in a new position for a new employer. In many companies, you’re basically getting in line to wait your turn to move up the ladder, and it may take years to advance beyond positions of indentured servitude.

Stick to it. Hopping from company to company looking for something “better” may allow you to get ahead in the short-term, but in the long-term your resume will become a mishmash of temporary stints that makes you look like a quitter.

In the end, persistence creates an impression of dedication and relevant experience — and it will outshine any other attribute, every time.

So take a look around. If you’re absolutely certain you’re on the right career path, then stick to it. Pay your dues. Climb ladders. It will be your turn soon enough.

#4 – Invest in yourself.

When you invest in yourself you can never lose. This applies to everything:

Learn to cook. You’ll save a bajillion dollars on food in your lifetime.

Learn a foreign language. You’ll expand your horizons and be easily employable.

Learn to spend less than you earn. You’ll never be broke.

#3 – You can’t change anything by just sitting back and looking at it.

Change requires two things: a conscious decision to accomplish something, and follow-through. If you want something accomplished, then do it now. If it can’t be done now, then do it today. If it can’t be done today, then start it today.

Change is tough, but the most difficult step is getting started. Of course once you’ve actually started, the most difficult step is following through. Change is tricky like that — but know that if you truly want it, you’ll find a way to create change in your life.

#2 – Expect people to be negative, especially if you’re carving your own path.

In all walks of life, you won’t see eye-to-eye with everyone. People will come out of the woodwork to tell you that you’ll fail, tell you that you suck, laugh at you, argue with you, call you names, write you messages laced with profanity, and be altogether unpleasant. As Tony Gazzo from Rocky put it, “Some guys, they just hate for no reason.”

The thing is, although it’s common to receive negativity from strangers, you’ll find that even the people you know and love can surprise you with negative attitudes. No matter who it is that’s trying to boo you off the stage, don’t let them succeed in doing so.

#1 – Do what you are.

We’ve all heard that ”If you love what you do, you will never work another day in your life.” The problem is that few people seem to actually have this luxury.

It seems that somewhere along the line the consensus changed to “If you do what you need to do, when you need to do it, then maybe someday you can do what you want to do, when you want to do it.” You end up spending the majority of your life waiting for that someday to arrive.

It’s mostly unavoidable though, since we spend most of our growing years hearing things like:

You need to go to college.
You need to get a job.
You need to keep working even if you don’t like your job, to pay for college.
You need to save for retirement, so that you have the option to retire.
Once you finally make it to retirement, then you can finally do what you want. It seems so backwards, doesn’t it?

When I’m not distracting myself from how repetitive my job is, I always think about how I’m slowly trading away the sunny days of my youth for “job security.” I show up, put my butt in a chair for eight hours a day, and collect a paycheck. Congratulations, I’ve traded away some time for some money.

I don’t feel alive at my job. I do shiet that’s unimportant to me. I’d rather spend my time doing anything else, but the things I want to do wouldn’t pay me the way my boring job does.

Consequently, I write. Not because it earns me a lot of money, but because I feel most alive when I’m writing. For me, to not write is suicide — and I desperately wish that I realized this about me sooner.

If I could offer my younger self some real advice, I’d tell myself not to base my career choice on what someone else recommended. I’d tell myself not to pick a major because it’s what’s popular. I’d tell myself not to get into a career field for the money.

I’d tell myself that the right choice is much simpler: Do what you are. As long as you’re true to yourself, and follow your own interests, you can find success through passion. Perhaps more importantly, you won’t wake up ten years later in a career field you hate wondering “What the hell happened?”

For anyone curious what the numbers on the HUD are:

On the upper left in the box is the indicated airspeed in knots. Up top is the heading of the plane. To the right in the box is the radar altimeter, which gives height above the surface in feet – it drops significantly as soon as the plane is over the ship. Above that number is its vertical velocity, which is the feet per minute the aircraft is descending at. At touchdown, it reaches over 1400 fpm!

At the bottom left is the current Gs the aircraft is at, and below that is the max Gs the aircraft felt on this flight, which means 6.9Gs were pulled by the pilot at some point.

This Is What A Meal At The World’s Best Restaurant, El Celler de Can Roca, Looks Like

Spanish restaurant El Celler de Can Roca regained its title as the world’s best restaurant on Monday, fending off previous winner Noma. But what makes Can Roca so special? Seldom does one establishment have such a recipe for success where each brother has excelled in their own field starting with Joan’s culinary direction as the executive chef, Josep’s impeccable choice and collection of wine as the sommelier and Jordi’s creativity as the pastry chef that is as whacky as Willy Wonka. Separately, they produce brilliance. What they bring together as a team is a gastronomic experience that is difficult to match.

The World, according to Joan Roca’s latest travels, was expressed through various bite-size morsels presented in a paper lantern representing the earth. The waiter proceeded by opening up the globe to reveal the contents. If there was one thing Can Roca does well it is their playful presentation. Creativity is not something that is lacking here.

A guacamole and grapfruit sphere represented Mexico, a liquid spherified ceviche ball for Peru(which came with a warning to have in one bite), hummus for Lebanon, honey and crumbled almonds for Morocco and kimchi for South Korea. They were good fun with distinct flavours depicting the countries from which Joan had been inspired. He even makes his own kimchi now. Impressive!

The Can Roca classic of the Caramelised Olives then made its appearance. A miniature olive tree was served like a bonzai in a pot. At closer inspection you could find green olives stuffed with anchovies with a caramelised coating hanging amongst its leaves. Sweet, brittle, sticky, juicy – all the sensations from each olive that was dangling off the branches. Sensational.

More amuse bouche followed with the Campari and grapefruit bonbon. This was a perfectly thin brittle cocoa butter sphere encasing a liquid mixture of the elegant bitters. A word of caution though, please eat this in one go.

Next was Joan Roca’s play on a Spanish classic of Calamares a la Romana. A welcome adaptation! The squid had been mashed up and reshaped into a thick circular disc and blow-torched before being topped with crispy balls of batter drenched with lemon juice. A finely balanced dish with a very intense flavour of squid and deliciously contrasting textures.

Marinated mussels in a ceviche sauce served on long mother of pearl spoons. A soft juicy mussel with a citrus note. This was quite a bit more simple than the other amuse bouche and perhaps my least favourite.

The last set of amuse bouche was a celebration of the St George’s mushroom, served in two parts. A thin cocoa butter shell encased a liquid concentrated with the flavour of the mushroom, served in beautiful stoneware.

A bowl with a metal lid was then presented to each of us. Our waiter proceeded by lifting the lid to reveal…

… a St George’s mushroom brioche and a separate escudella (Catalan broth / stew) underneath in a bowl. We were advised to dunk the brioche into the broth before eating it.

Perhaps it was the choice of mushroom but I felt, for the amount of preparation that went into the mushroom, the intensity of the flavour was not at the level I expected. Some white truffle could have excited my olfactory senses better perhaps?

On to our first course of the day with the Oyster with black pearl served in its own juice with melon juice, dots of cucumber, celery, apple, lime jelly, wood sorrel, melon flower and heartleaf iceplant. Whilst I consider myself to be a purist when it comes to the matter of oysters, I was pleasantly surprised as to how all the component worked here without distracting from the essence of the oyster. It was an elegant and finely balanced dish that could have easily gone wrong, but it didn’t.

A beautiful dish then appeared before us which required a double-take. A dessert dish already? No, of course not, I was mistaken. It was instead Elderflower infusion, cherries with amaretto, gingered cherries and smoked sardine. Of course, how could I have mistaken? I wasn’t sure what to expect here as elderflower infusion, cherries and sardine sounded like a recipe for disaster. However, it was surprisingly memorable…. but for positive reasons. The smoked sardines transformed the dish from what could have been a dessert course into unique savoury dish. Floral, fruity and light – the elderflower infusion effectively removing the fishiness of the silky sardine leaving only the delicate flavour of the fish.

The next course was a celebration of the local staple, olives. A modern take on a classic with theBlack olive gazpacho. This involved a spicy gordal olive mousse, black olive fritter, ice cream made from manzanilla and olives, toasted bread with oil, fennel jelly, winter savory jelly and picual olive. I was amazed to be able to distinctly pick out each flavour of the variety of olives. From the sweet black olive gazpacho to the contrasting bitter and salty gordal olive mousse and slices of picual olives. We needed more bread to mop this beauty up.

Another savoury dish appeared again mimicking a classic dessert (also known as Viennetta for the non-Spanish), the White asparagus comtessa and black truffle powder. I thought the white asparagus on the side was unnecessary but it did allow me to greater appreciate the intensity of the creamy and velvety ice cream which was full of asparagus flavour such as I had never tasted before. The icing on the cake, literally and figuratively, was that earthy black truffle powder. If only Vienetta came in this flavour…

Joan Roca made sure to make full use of the King prawn (I am often frustrated when other establishments have failed to serve the whole crustacean) served charcoal grilled with king prawn sand, ink rocks, fried legs, head juice and king prawn essence. Admittedly, this did not come anywhere near the prawns I had at Asador Etxebarri but I did enjoy the extremely intense and rich essence made from the brain and the smokey flesh of the prawn. My favourite bit, however, was the crispy fried head and legs. Crunchy.

A slightly smoked fillet of Red sea bream, yuzu, capers and crunchy pickled vegetables was next. This was a nicely cooked piece of fish, tender and moist but nothing extraordinary and perhaps slightly disappointing when compared against the other dishes.

A much stronger fish course was the Salty cod brandade with salt cod tripe, salt cod foam, olive oil soup, shallots, honey, thyme and chilli pepper. Great interplay of flavours from the creamy and salty brandade balanced against the sweet honey and slightly citrusy thyme. The slight kick from the red chilli was again spot on. Despite the strong flavours, it was a surprisingly light dish.

Whilst there had been no disaster courses, I felt there had been a lackluster performance in the main segment of the meal compared to the amuse bouches. That was however rectified with the tender and suckling Iberian suckling pig blanquette that had been cooked at 63°C over 30 hours, retaining a beautifully crispy crackling coating. Joan Roca went further to match his take on the cochinillo (suckling pig) with a deconstructed aroma of riesling wine using sweet mango terrine, melon, beetroot, beetroot purée, black garlic, onion and slightly tart orange concentrate. This was much more like it. Clever piece of cooking indeed.

Next was a minimalist interpretation of the traditional Catalan fishermen’s soup (Suquet); essentially Red mullet cooked sous-vide at a low temperature, served on top of a concentrated fish soup with shredded cabbage and three towers of purée; orange, fennel and saffron. The depth of the fish soup was remarkable and the fish was unbelievably flavoursome. Personally I still prefered the traditional rustic soup but this wasn’t bad.

A glass cloche filled with smoke was then presented to us. The waiter then proceeded by revealing what laid hidden underneath…

… which was a smokey Charcoal grilled lamb breast fillet and sweetbreads with spring mushrooms.  Tender piece of lamb, crispy skin and silky sweetbread, served over a concentrated lamb jus which had also been soaked up by some of the earthy morel mushrooms. I wondered what they had done with the rest of the lamb because I wanted more.

The finale of the savoury segment was a rather brave dish of Pigeon liver and onion, curry-caramelised walnuts, juniper, orange peel and herbs. I absolutely loved the marriage of flavours between the rich gamey pigeon liver mousse, the curry and walnut caramel layer and the classic orange. A sliver of pigeon liver was also served pink but that didn’t phase me. This was a solid dish which also appeared on my first visit and I could see why. Earthy, gamey, rich and intense. I could however appreciate that if game and liver was not your thing then you would have been less enthused.

On to the dessert and the best course of the evening. The Caramelised apricot: blown sugar apricot with vanilla and caramelised apricot cream was not only a work of art but divine. Visually this is one of the best dishes I have encountered with unbelievable craftsmanship. The sugar work was filled with an apricot foam and presented on a bed of vanilla. The intensity of the apricot flavour was unbelievable and stood out next to the slice of fresh apricot. It was one hell of a dessert particulalry considering I was not the biggest apricot fan… until that day.

Another modern interpretation by Jordi Roca with Strawberries and cream which was perhaps the weakest dessert dish. It was essentially just a rod of strawberry sorbet, wrapped in a cylinder of cream and more strawberry sorbet, ringed by a spiral of delicate sugar work. Mind you, fresas con nata (strawberry with cream) is a very popular dish in Spain so perhaps the significance may have been slightly lost on some.

Our final dessert dish was a Mocha mille-feuille, anise mille-feuille with mocha foam and coffee granita. A comforting dish with a lovely contrast of texture, between the gooey mocha and brittle sugar sheets, and flavour, between the sweet foam and bitter coffee granita. It was however the not the most visually appealing dessert, resembling perhaps closer to a half chewed snicker bar. Looks can be deceiving, indeed.

n addition to the dining room was the Sweets trolley designed by local artist Andreu Carulla (who also designed the lantern from the amuse bouche, equipments in Rocambolesc and many other tableware at Can Roca). The trolley was filled with macarons, chocolates, fruit jellies and other sweets. To be honest, I was too full by this point.
