Clockwise from top- Sourdough loaf (round) Horseradish mustard, shallots, two rib-eyes, crimini mushrooms (young portabellas) You will also need- a little butter for sauteing, a deep saucepan, a pan for broiling, parchment paper, heavy-duty string, tinfoil, thin cutting board or similar object, weights.

cut up the mushrooms and shallots into 1/4 inch chunks.

Sauté them both in a little butter until cooked through

Salt and pepper, then broil the rib eyes 5-7 minutes per side (ovens will vary, so keep a close watch)

Cut off the top from the sourdough loaf, and pull out excess bread

Tuck in the first rib-eye, then add the cooked mushroom mixture in a generous layer.

Wrap up in a double layer of parchment paper and secure it with the string. Lighter for size reference. Next wrap it with tin foil.
