1 lb of boneless Short Ribs, after removing from being in freezer for 15 minutes
Cut into ~1.5″ cubes
Place in food processor and Pulse at 1-second intervals (don’t overfill)
Consistency should look like this
Formed burger patties
Coarse salt and fresh cracked pepper
In cast iron skillet
Resting (Dubliner Cheddar is the cheese)
After 5 minute rest (I had no decent rolls on hand, but this was adequate as it let the burger flavor shine)
